How to Chop Celery

Choose fresh, crisp celery and thoroughly wash it before beginning. You’ll need a good cutting board and a sharp knife. Use a chef’s knife for the best results.

The basic way to chop celery is to simply slice celery into half moon shapes. Chop off the leafy ends of the celery stalk (down to the “joint” in the stalk), but leave the base of the stalk intact. The leaves add great flavor to soups, broths, or stocks, and can be a good addition to a green salad. If your celery stalks don’t have leaves, simply trim off about 1/2 inch of the top of the stalk. Then, starting at the top of the stalk, make slices perpendicular to the stalk to get slices as thick or as thin as you want.

For a larger piece of celery, cut the stalks on the bias (on the diagonal). Hold your knife diagonally across the celery stalk, and slice. Cutting on the bias gives you a larger piece of celery than simple slices, but still thin enough to use in salads or stir fry recipes.

If you want smaller celery pieces, start by splitting the celery stalk lengthwise. Make up to 3 cuts down the length of the celery stalk, depending on how fine you want the celery diced. Do not cut all the way through the base of the celery – this will help hold all the pieces together so it is easier to chop (similar to chopping an onion). Once you have the stalk split into as many sections as you want, hold all the sections together and cut perpendicular to the stalk. This will give you finely chopped celery.

Many recipes will call for “1 cup of chopped celery” or “1/2 cup of sliced celery” but it is not always obvious to determine actually how many celery stalks are in a cup. In order to help make cooking easier we did some experiments to help discover how much celery you need to buy.

To answer How many celery stalks in a cup we went to the grocery store to check out the produce section. After surveying the vegetable selection we discovered that 1 bunch of celery typically contains 8 or 9 medium ribbed stalks and weighs about 1 pound. For our test measurements we chose 1 medium rib or celery stalk for our measurements; these test models weighed between 1.75 and 2 ounces (49.6 to 56.7 grams) each.

Once we started working in the kitchen, we found that 1 medium celery stalk yielded about 1/2 cup of chopped or sliced celery. In general, a whole cup of chopped celery or cup of sliced celery takes 2 stalks to reach the mark. However, like most fruits and vegetables, if the recipe calls for 1 cup of finely minced celery then it will take about 3 whole medium stalks to do the trick. An entire bunch of celery will yield 4 to 4.5 cups of chopped or sliced vegetables.
